One of my all-time favorite Korean dishes is Bibimbap — and what I love most about it is the freedom it gives you. You can pile on whatever you want, mix it all together with rice and Gochujang sauce, and it just works.
My go-to toppings are spinach, beansprouts, kimchi, bulgogi, and a perfectly cooked egg. But honestly, that's just where it starts. In my family, Bibimbap is also our fridge's best friend — a delicious way to use up leftover side dishes and clear out whatever's been sitting in there.
What makes it so special is that contrast. I love eating Korean side dishes on their own with rice, but the moment everything gets mixed together in that bowl, something magical happens — all the flavors meld into something even more savory and satisfying than the sum of its parts.
